Dieting around the holidays? Bah, humbug! Eating well during holiday season is a bit like walking up a down escalator while everyone else is going down the right way and they're gorging on delicious-looking goodies at the same time. This recipe shared by Lauretta Mann will help you stay the course without missing all the fun.

HOLIDAY "MEATLOAF"

- 1 onion, chopped

- 1 can (20 oz) vegetarian burger*

- ½ green pepper, chopped

- 2/3 c. olive oil

- ½ tsp. garlic salt

- 4 eggs

- ¼ tsp. poultry seasoning

- ¼ c. brown sugar

- 4 slices hearty bread, cubed (or 6 slices of white bread)

- Vegetable cooking spray

- 2 T. butter

Saute onion, green pepper garlic salt, and poultry seasoning in butter. Add bread and stir. Cover and let stand. Mix burger, olive oil and eggs. Add to the vegetable mixture. Coat a loaf pan (or shallow baking dish) with cooking spray or oil. Spring brown sugar over the bottom and dribble with catsup over sugar. Gently spoon the burger mixture over the catsup. Bake at 350 degrees for 50 to 60 minutes uncovered. Allow to set 15 minutes before turning it out onto a platter for serving. For the holidays or any day, garnish with sprigs of parsley.

Served with a baked potatoe, fresh broccoli or green beans and a slice of whole wheat bread and fresh green salad it is so mouthwatering.
