We're inviting you and your family to join us for our YMCA Soup Night on Thursday, October 18, 2012 from 5:30 - 7:00 pm. All are welcome! Soup and Health Information on the importance of Volunteering will be provided! Flu shots will also available $30 (cash, check, or Medicare only).

1 C red lentils

1 – 2 Tbs. olive oil

4 C water

1 carrot, diced

½ - 1 tsp salt

½ C onions, chopped

1 parsnip, diced

2 – 3 garlic, minced

14-oz can diced tomatoes

1 Tbs lemon juice

1 vegetable bouillon cube or 1 tsp McKay’s Chicken Seasoning

¼ tsp. dried cilantro

3 C cabbage, chopped

Rinse the lentils in cold water. Drain and place in a kettle and add all of the above ingredients. Bring to a boil and cook for about ½ hour or until tender.

This soup is a family favorite! Serve with cornbread for an extra treat!
